Incidentally, rice germ contains about 18% oil, and about 100g can be extracted from 10kg of brown rice.
The special care that “Kuramoto Bijin” (Beautiful Winery) gives to sake, including the use of rice oil, is something that only a sake brewery that consumes a large amount of rice year after year and understands rice down to the smallest detail can achieve.
The scraped-off parts during sake production are cleverly reused.
Brown rice is the remaining part. After the rice has been hulled and milled from the stalk.
The white rice we commonly eat is made by removing the bran layer covering the surface of brown rice. However, when making sake, white rice is milled to only 70% or less of its original size (the bran layer is scraped off), and only the inner part is used.
The percentage of rice remaining after milling is called the polishing ratio, and for Junmai Daiginjo sake, considered the pinnacle of Japanese sake, the polishing ratio is 50% or less. Using less than half of the original amount of rice is extremely luxurious.
